Our Commitment
The wines of château Peychaud are fruity, generous and racy. Our requirement is to move between tradition and modernity, with one priority: the best expression of our terroir and the experience of formers. this means :
in the vineyard
-
-
- a precise work of the vine plants, adapted to each parcel and respecting the environment. A strict control of the vineyard is the key to produce high quality fruit,
- the search of an optimum maturity for each grape variety,
- a trellis giving a large leaf setting,
- natural grassing in the inter-rows,
- a density of 5000 plants/ha and mastered yields in order that grapes can reveal all its aromatic complexity.
-
in the cellar
-
-
- a slow extraction of tannins,
- a vinification adapted to each parcel for each vintage,
- a long maturing, 18 months minimum in vat or French oak barrels, in order to give time to aromas and tannins to express and to unify,
- a straight collaboration with our oenologist Mister Sourdès, who works with us for more than 20 years,
-
and mainly
-
-
- a team of women and men extremely rigorous and engaged, knowing each wine plant of Peychaud, as well as the climate, the last vintages, and who know more thant anybody else what each row of vines needs,
- patience, efforts, rigor but also gentleness, passion for work and permanent improvements!
